Roasted Honey Dijon Potatoes |

Very tasty potato dish! Add in some garlic powder or fresh minced garlic if desired. The only changes I make is to add a little extra honey and onion. Ingredients:
2 lb potato, cut into 1 inch pieces |
2 small onions, thinly sliced |
1/2 cup dijon mustard |
1/2 cup olive oil |
2-4 teaspoon honey |
2 tbsp. chopped fresh parsley |
salt and pepper |
Directions:
1. Set oven to 375 degrees. 2. Mix together mustard, honey, oil and salt and pepper; add to the potatoes and onion slices. 3. Pour the sauce over potato/onion then toss well coate. 4. Place in a greased baking pan. 5. Bake for 35-40 minutes or until potatoes are tender. 6. Sprinkle fresh parsley over potatoes. |
