Roasted Harvest Vegetables

This dish will warm you up in the middle of a hard winter
Ingredients:
1 medium butternut squash, peeled, seeded
1 large sweet potato
2 yukon gold potatoes
2 red delicious apples
2 medium yellow onions
1/8 cup honey
juice from 1/2 a lemon
1/2 teaspoon ginger powder
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
2 dashes cinnamon
4 tablespoon olive oil
Directions:
1. Peel and cut onions into 1/4 wedges
2. Cut apples into 1/4 wedges
3. Cut all vegetables into 2 cubes place all into large greased roasting pan (the pan should be large enough so vegetables are not piled on top of each other)
4. Mix honey, lemon juice, olive oil and spices together pour over vegetables and toss.
5. Roast at 400 degrees stirring every 30 minutes until tender
6. Goes well with roasted chicken, pork loin or turkey.
