Roasted Gingered Sweet Potatoes |

Ingredients:
2 large sweet potatoes, peeled and cut into wedges |
2 tablespoons olive oil |
1/4 cup flaked coconut |
2 tablespoons minced fresh ginger |
2 tablespoons brown sugar |
1 garlic clove, minced |
1/2 teaspoon salt |
1/4 teaspoon ground red pepper |
Directions:
1. Toss together sweet potato and olive oil; arrange potato in an aluminum foil-lined 15- x 10-inch jellyroll pan. 2. Bake at 450° for 10 minutes. Reduce heat to 350°; bake 35 to 40 minutes. 3. Combine coconut and next 5 ingredients. Spread mixture onto a baking sheet; bake at 350° for 5 minutes or until golden. Sprinkle potato with coconut mixture. |
