Roasted Gingered Sweet Potatoes |

Found this recipe on line awhile back. It looks easy and I love the taste of sweet and spicey. Enjoy. Ingredients:
2 large sweet potatoes, peeled and cut into wedges |
2 tbs. olive oil |
1/4 cup flaked coconut |
2 tbs. minced fresh ginger |
2 tbs. brown sugar |
1 garlic glove, minced |
1/2 tsp. salt |
1/4 tsp. ground red pepper |
Directions:
1. Preheat oven to 450º. 2. Toss together sweet potato and olive oil; arrange potato in an aluminum foil-lined jellyroll pan. 3. Bake for 10 minutes. Reduce heat to 350º; bake 35 to 45 minutes. 4. Combine coconut and next 5 ingredients. 5. Spread mixture onto a baking sheet. 6. Bake at 350º for 5 minutes or until golden. 7. Sprinkle potato with coconut mixture. |
