Roasted Garlic Soybean Hummus |

Ingredients:
3 cloves garlic |
1 1/2 cups cooked soybeans |
2 tablespoons roasted sesame tahini |
1 tablespoon olive oil |
1 tablespoon lemon juice |
1/2 cup fresh parsley |
salt |
1 -4 tablespoon water or 1 -4 tablespoon vegetable broth |
Directions:
1. Preheat broiler. 2. Broil garlic cloves for 5 to 10 minutes, or until they just begin to brown and can be pierced easily with a fork. 3. In a food processor, combine garlic with soybeans, tahini, olive oil, lemon juice and parsley. 4. Blend until smooth, adding salt to taste and water or broth to reach desired consistency. |
