Roasted Garlic-Rubbed Fillets |

Try the roasted garlic rub on other cuts of meat such as pork chops or boneless, skinless chicken breasts. Ingredients:
2 large garlic bulbs |
1 1/4 teaspoons olive oil, divided |
1 teaspoon freshly ground pepper |
1/2 teaspoon kosher salt |
4 (4-oz.) beef tenderloin fillets |
1 teaspoon butter |
Directions:
1. Cut off pointed ends of garlic; place on a piece of aluminum foil, and drizzle cut sides with 1/4 tsp. olive oil. Fold foil to seal. 2. Bake at 400° for 40 minutes, and let stand 30 minutes. Squeeze pulp from cloves into a small bowl. Smash garlic, pressing with back of a spoon to make a paste. 3. Sprinkle pepper and salt evenly on beef fillets. 4. Melt butter with remaining 1 tsp. oil in an 8-inch nonstick skillet over medium heat. Add steaks; cook 4 to 5 minutes on each side or to desired degree of doneness. Top steaks evenly with garlic paste. |
