Roasted Garlic Potato Soup |

What a terrific idea for a cold winter's day brunch or as a main for supper. Very tasty and great with a nice thick slice of dark bread. Ingredients:
garlic bulbs, whole 4 |
1 lb bacon |
8 oz onions, chopped |
1 lb carrots, diced |
2 oz all purpose flour |
5 lbs potatoes skinned or not and cubed |
1 gallon chicken broth |
2 bay leaves |
1 quart half & half cream |
1/2 cup fresh parsley, chopped |
salt and freshly ground pepper to taste |

Directions:
1. Wrap garlic in foil and roast at 375 ° F for 75 minutes in a CONVENTIONAL OVEN , until soft. 2. Cool and press out garlic. 3. Set aside. 4. In a large skillet, cook bacon until browned. 5. Add onions and carrots and cook until tender. 6. Add flour and cook 1 minute. 7. In a large pot, stir together potatoes, chicken broth, bacon mixture and bay leaves. 8. Simmer 20 minutes or until potatoes are tender. 9. Add garlic, half & half cream and parsley. 10. Heat through. 11. Season with salt and pepper. |
