ROASTED GARLIC MASHED POTATOES DATED 1961 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Sanderson Estate in Bonham, Texas in 1984. This is close to a weekly fix in my home. Read more . We all love it and I usually have these ingredients on hand.
Ingredients:
2 heads garlic
1 tablespoon olive oil
4 pounds baking potatoes peeled and cut into pieces
1/2 cup butter
2 teaspoons salt
1 teaspoon pepper
1 cup milk
Directions:
1. Trim tops off heads of garlic and place each one on a square of foil.
2. Drizzle with oil and wrap in foil then bake at 425 for 30 minutes.
3. Set aside to cool.
4. Boil potatoes until tender then drain and transfer to a large mixing bowl.
5. Add butter, salt, pepper and enough milk to get the consistency you like.
6. Beat with electric mixer until fluffy.
7. Squeeze cloves of garlic from peels and beat into potatoes.
