Roasted Garlic Mashed Potatoes |

I love these smashed potatoes, then again I love anything with garlic. Ingredients:
1 bulb garlic, skin on |
2 fl. oz. olive oil |
pinch of kosher salt |
1 lb. small red potatoes, scrubbed and cut into quarters |
2 oz. butter |
4 fl. oz. heavy cream |
kosher salt, and fresh ground black pepper, as needed |
Directions:
1. Cut top of garlic bulb off 2. Place garlic in foil with olive oil and kosher salt 3. Place packer in a 375 oven until garlic is golden brown 4. Squeeze out roasted garlic and make a paste 5. In a small sauce pan, cover potatoes with cold water seasoned with salt 6. Bring the water to a boil and simmer until potatoes are fork tender 7. Drain the potatoes and return to pot 8. In a separate sauce pan scald cream with the butter 9. Pour cream and butter mixture on top of potatoes, as needed 10. Add roasted garlic paste, kosher salt and blk pepper as needed 11. Mash with a fork just until incorporated 12. Adjust seasonings |
