Roasted Garlic Mashed Potatoes

These potatoes go very well with almost any thing. Very good with a meat served with sauce, especially meats cooked in red sauces. Like braised short ribs. I will provide recipe for those also
Ingredients:
1 1/4 pound waxy potatoes ( i like yukon gold)
4 ounces milk (heated)
2 ounces butter ( melted)
2 ounces cream cheese (warmed)
1 whole head roasted garlic (instructions below)
1/2 tsp salt
1/4 tsp pepper
Directions:
1. To roast garlic, place the entire head on a baking sheet in the oven preheated to 425. Bake for 20-30 minutes. To use just squeeze the roasted garlic from the papery husks.
2. While garlic is baking peel potatoes, slice thin, and cook in boiling water until very tender. Drain and return them to the heat to dry for a minute. Puree the potatoes and garlic through a food mill while they are still very hot. Add the heated milk, melted butter and warm cream cheese. Whip until very smooth and light.(Do not use a hand mixer it can make these gluey, instead whip with a whisk by hand or food processor with a mixer attachment on medium). Season with salt and pepper
