This is a delicious guacamole I saw done by Rick Bayliss. I made some up and the taste is wonderful. Roasted garllic makes the difference. Ingredients:
6 cloves garlic,unpeeled |
6 med-large ripe avocados |
1/2 c coarsely chopped fresh cilantro leaves |
2 tbs. fresh squeezed lime juice |
coarse salt |
Directions:
1. In med. dry skillet,roast garlic over med. heat,turning,until soft and blackened in spots, 10-15 mins.. Remove from heat . When cool enough to handle,peel and finely chop. 2. Halve avocados lengthwise and remove pit;scoop out flesh into large bowl. Add garlic,cilantro and lime juice;coarsely mash until well combined. Season with 1 tsp salt. 3. Transfer to serving bowl and press plastic wrap directly on surface of guacamole to cover. Refrigerate until ready to serve. |
