Guy Fieri made this on his show last week. Just made them for dinner to go with pork. Fantastic! I added about a teaspoon of granulated garlic to intensify the garlic flavor and used fat-free half and half to reduce the calories. Read more . 3 1/2 pounds yukon gold potatoes, cut into cubes - leave skins on |
kosher salt |
10 cloves garlic |
freshly ground black pepper, to taste |
1 tablespoon olive oil |
1 1/2 cups half and half, i used the fat-free variety |
3 tablespoons butter |
2 granny smith apples, peeled and diced small |
1 teaspoon granulated garlic |
Directions:
1. Preheat oven to 350. 2. Cook potatoes in boiling salted water until tender. 3. In aluminum foil, put garlic cloves, salt & pepper & drizzle with oil. Seal and roast about 30 minutes or so. 4. Meanwhile, heat half & half. Drain potatoes and put them back into the pot. Add warmed half & half, butter and roasted garlic squeezed from cloves. Mash together. Stir in apples, season to taste. |
