Roasted Fingerling Potatoes With Garlic |

These mini potatoes are so flavorful, and if you like garlic and rosemary this is the dish for you! Very easy and the aroma is wonderful. Ingredients:
2 lbs fingerling potatoes |
5 cloves of garlic, crushed and finely minced |
3 tbsp. olive oil |
1/2 tsp. dried rosemary (crush a little) |
coarse salt and freshly ground black pepper to taste |
(i used 1 tsp. salt) |
Directions:
1. Heat oven to 450 2. Lightly grease a large shallow baking dish with olive oil or spray. 3. Scrub potatoes and cut large ones in half length wise. 4. In a large bowl, combine the potatoes, garlic, olive oil, rosemary, pepper and salt. 5. Place potatoes in shallow baking dish with sliced ones skin side down. 6. Bake for 25 min or until potatoes are tender. |
