We roast eggplant slices and use as a base for wraps, lower fat eggplant parmesan, or for pizza topping or just as is as a yummy appetizer Ingredients:
1 large eggplant peeled and sliced thin vertically |
olive oil |
garlic powder |
basil o italian seasoning |
shredded mozzarella cheese |
Directions:
1. Preheat the oven to 400F 2. Lay slices down on a baking sheet in a single layer 3. Brush each slice liberally with olive oil 4. sprinkle on basil, garlic powder and shredded cheese 5. Bake till slices are soft and golden brown 6. Use as you wish. 7. We often top the slices with tomato sauce and fresh chopped basil |
