A great healthy side dish, easy to prepare and the flavors meld prefectly.
Ingredients:
2 eggplants
1 clove garlic
2 onions
1/4 cup basil leaves
1/2 cup or so olive oil
salt and pepper to taste
Directions:
1. Preheat oven to 350
2. Peel and slice the eggplants into 1/2 slices
3. mince garlic
4. slice onions thinly (If you like a lot of onion keep the slices on the thicker side so they don't melt too much)
5. chop or rip the fresh basil leaves
6. In a 9X13 pan pour enough olive oil to coat the bottom of the pan.
7. Arrange a single layer of eggplant
8. Arrange a single layer of onion slices over eggplant
9. Drizzle with olive oil, sprinkle half the garlic, and half the basil over the top.
10. Sprinkle with salt and pepper.
11. Continue layering, the last layer will be just eggplant drizzled with the olive oil.
12. Cover pan with foil and bake for 80 minutes at 350 degrees.
13. Remove foil and bake for another 10 minutes to brown the top
