Roasted Cream Cheese N Chive Mashed Potoatoes |

Ingredients:
6-7 cups yukon gold potatoes peeled and cut into chunks |
2 tbs olive oil |
seasoned salt |
pepper |
4 oz cream cheese |
half and half (to consistency) |
3 t chives |
Directions:
1. Directions 2. Preheat oven to 425 3. Cut potatoes into bowl of ice cold water 4. Drain and toss with oil, seasoned salt and pepper 5. Pour onto baking pan 6. Place on lowest rack for best browning 7. Roast for 40-45 min turning once 8. Mash potatoes in a large bowl leaving them slightly chunky 9. Stir in cream cheese, chives and half and half 10. Mash together, leaving them slightly thick |
