                                                1 tsp canola oil  |  
                                                1 clove garlic  |  
                                                1 1/2 cups corn  |  
                                                1 1/2 cups black beans  |  
                                                1/2 cup red onion  |  
                                                1 mango  |  
                                                1/2 cup red pepper  |  
                                                3 t lime juice  |  
                                                1 chipotle pepper, in adobo saude  |  
                                                1 1/2 t fresh cilantro  |  
                                                1/4 tsp ground cumin  |  
                                                1/4 tsp salt  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Heat oil in skillet over medium high heat. 2. Add garlic and cook about 30 seconds. 3. Add corn and cook until browned, about 8 minutes. 4. Transfer corn to large bowel, stir in mango, beans, onion, pepper, lime juice, chipotle, cilantro, cumin and salt.                              |
