Roasted Corn And Black Bean Salsa |

Next time your roasting corn on the grill throw on some extras with this salsa in mind. Sometimes I'll roast & peel the peppers too. Ingredients:
1 cup canned black beans, drained & rinsed |
1/4 cup chopped cilantro |
1 cup roasted corn, removed from cob |
1/2 cup lime juice |
1/2 medium red onion diced |
1/4 cup olive oil |
1/2 medium red bell pepper, diced |
1/2 medium poblano pepper, diced |
1/2 tablespoon black pepper |
1/2 cup seeded diced tomato |
1 tablespoon salt |
Directions:
1. Combine all ingredients in a large bowl up to and including the cilantro. 2. In a separate bowl whisk in the olive oil a little at time. Add to the salsa and toss gently to combine. 3. Refrigerate for at least one hour. 4. Serve with favorite tortilla chips |
