Roasted Cod With Olive Tapenade |

This roasted cod is taken from everyday to out of this world, with the addition of a simple tapenade to use as a garnish. Ingredients:
1 lb of cod |
1/2 a cup of calamata olives |
3 teaspoons of oil |
1 shallot - finely chopped or minced |
1 1/2 teaspoons of fresh oregano |
1 teaspoon of balsamic vinegar |
Directions:
1. Preheat the oven to 450. 2. Rub the cod with 2 teaspoons of oil and some salt and pepper. 3. Place the cod on cookie sheet and bake for 15 to 20 minutes. 4. While the cod is baking finely chop the olives and oregano. 5. Preheat a small fryingpan on medium and add the other teaspoon of oil. 6. Add the Shallot and cook 30 seconds untll fragrant. 7. Add the olives and cook for about 2 minutes to heat through. 8. Add the oregano and vinegar and cook until vinegar is reduced and thickened. 9. Remove the topping from the pan to prevent it from overcooking. 10. Top fish with tapenade. |
