Roasted Coconut Cashew Nuts |

People LOVE this! Can do it with almonds or peanuts. Ingredients:
2 cups cashew nuts |
1 1/3 cups coconut, desiccated and unsweetened |
2 small red chilies, seeded and finely chopped |
1 tablespoon peanut oil |
2 tablespoons honey |
salt |
black pepper |
Directions:
1. Heat oil in wok and stir in honey. 2. After a few seconds add nuts and coconut and stir fry until both are golden brown. 3. Add chilies and salt and pepper to taste. 4. Toss til well mixed. 5. Serve warm or rolled in paper cones or saucers. |
