Make this Roasted Citrus-Herb Salmon for a healthy and flavorful fish dinner. Lemon and lime zest, garlic and fresh herbs make for a perfect rub. Ingredients:
1 tablespoon fresh parsley, chopped |
1 tablespoon fresh thyme, chopped |
1 tablespoon garlic, minced |
1 tablespoon olive oil |
2 teaspoons lemon zest |
2 teaspoons lime zest |
1 1/2 teaspoons salt |
1/2 teaspoon pepper |
1 2 to 3-lb. salmon fillet |
Directions:
1. Combine all ingredients except salmon in a small bowl; set aside. 2. Arrange salmon on a parchment paper-lined baking sheet; spread herb mixture over salmon. 3. Bake, uncovered, at 400 degrees for 12 to 15 minutes, or until salmon flakes easily with a fork. |
