Roasted Chicken for Amanda |

Amanda's favorite chicken. Produces, moist, flavorful chicken without marinading or brining. Ingredients:
1 (4 -5 lb) roasting chickens |
1 tablespoon olive oil |
1 -2 teaspoon lemon-pepper seasoning (or to taste) |
4 sprigs rosemary (3 to 4 inch stems of rosemary) |
1/2 onion (halved) |
Directions:
1. Preheat oven to 375°F. 2. Remove giblets and neck if included. 3. Rinse and pat dry chicken. 4. Rub with olive oil and sprinkle lemon pepper all over. 5. Place quarters of onion in cavity with 2 sprigs of rosemary. 6. Strip the remaining sprigs of rosemary and sprinkle over chicken. 7. Place in a roasting bag, secure and vent in several places. 8. (Or - roast in shallow, uncovered pan for 50 minutes and cover loosely for remainder of cook). 9. Place on shallow roasting or casserole dish and place in oven. 10. Roast until 170 F in the breast or about 80 to 90 minutes. 11. Rest the chicken for 20 minutes before slicing. |
