A delicious Sunday dinner. Ingredients:
3-lb. whole broiler-fryer chicken |
1 tbs.. butter |
4 medium red potatoes, quartered |
2 c. frozen baby whole carrots |
2 stalks celery, cut into chunks |
12 small white onions, peeled |
1/2 tsp. dried rosemary leaves, crushed |
1 c. chicken broth |
1/2 c. orange juice |
Directions:
1. Preheat oven to 375° 2. Brush chicken with butter. 3. Place chicken and vegetables in roasting pan. 4. Sprinkle with rosemary. 5. Mix broth and orange juice and pour half of broth mixture over all. 6. Roast for 1 hour.. 7. Stir vegetables. 8. Add remaining broth mixture to pan. 9. Roast 30 minutes more or until done. |
