Roasted Cauliflower and Mushrooms |

Different way to serve cauliflower. Ingredients:
1 head cauliflower, broken into flowerets |
8 ounces mushrooms, quartered |
1/2 cup chopped onion |
3 garlic cloves, minced |
2 tablespoons olive oil |
3 teaspoons lemon juice |
3 teaspoons cider vinegar |
1/2 teaspoon sugar |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1/8 teaspoon curry powder |
1 teaspoon parsley |
Directions:
1. Preeat oven to 350. 2. Spray a casserole dish with cooking spray. 3. Place cauliflower and mushrooms in a large bowl; add all remaining ingredients and toss together well. 4. Pour into prepared casserole dish. 5. Bake, uncovered, 40-45 minutes (stir occasionally) or until vegetables are tender and golden. |
