Roasted Carrots With Feta |

The sweet carrots are balanced by the tartness of the Feta cheese. Ingredients:
1 lb carrots, cut into 1/2-inch slices on the diagonal or 1 lb baby carrots, cut in half on the diagonal |
1 tablespoon extra virgin olive oil |
salt & freshly ground black pepper |
2 tablespoons feta cheese, crumbled |
1 tablespoon fresh parsley, chopped |
Directions:
1. Preheat oven to 425 degrees F. 2. Toss carrots with oil on a rimmed baking sheet; season with coarse salt and pepper. 3. Roast carrots until caramelized, golden, and tender, about 25 minutes. 4. Transfer carrots to a bowl and toss with feta and parsley. |
