These roasted soybeans have 20 percent less fat than packaged flavored soy nuts. For a reduced-sodium version, use salt-free Cajun seasoning. Ingredients:
1 (16-ounce) package frozen shelled edamame, thawed |
olive oil-flavored cooking spray |
1 tablespoon cajun seasoning |
1 teaspoon onion powder |
1/4 teaspoon kosher salt |
Directions:
1. Preheat oven to 300°. 2. Arrange edamame in a single layer on a baking sheet; lightly coat with cooking spray. 3. Combine Cajun seasoning, onion powder, and salt; sprinkle over edamame, and toss to coat. Bake at 300° for 1 hour and 45 minutes, stirring every 30 minutes. Cool completely. Store in an airtight container. |
