6 cup(s) butternut squash (approx. 3 1/2 lbs.) peeled and cubed
1 tablespoon(s) olive oil
1 1/2 teaspoon(s) dried herbes de provence
3/4 teaspoon(s) kosher salt
1/2 teaspoon(s) freshly ground black pepper
2 medium onions (approx. 3/4 lb.) each cut into 8 wedges
cooking spray
Directions:
1. Preheat oven to 425 degrees F.
2. Place first 6 ingredients in a shallow roasting pan coated with cooking spray; toss well. Bake at 425 degrees for 30 minutes or until tender and lightly browned, stirring occasionally.
