Roasted Buttermilk Mashed Potatoes

MMMM good. Potatoes are roasted then chunky mashed with green onions and buttermilk! THe buttermilk gives them a rich twang, but I do this with regular milk, too. Roasting the potatoes before mashing gives them a rich flavor! Read more !
Ingredients:
6-7 cups yukon gold potatoes peeled and cut into chunks
2 tbs olive oil
1 1/2 cups buttermilk warmed
2 tbs butter
1 tbs minced green onions or chives
salt and pepper
Directions:
1. Preheat oven to 425
2. Cut potatoes into bowl of ice cold water
3. Drain and toss with oil
4. Pour onto baking pan
5. Place on lowest rack for best browning
6. Roast for 40-45 min turning once
7. Mash potatoes in a large bowl leaving them slightly chunky
8. Stir in buttermilk butter and onions
9. Season with salt and pepper.
