Roasted Broccolini And Tomatoes |

This is a simple, quick side dish. Broccolini is a mild veggie with hints of asparagus and goes well with the acidic tomatoes and bread crumb topping. Ingredients:
2 bunches broccolini(about 2lbs) stems trimmed up to tender part |
1 medium onion sliced or chopped |
20 average sized cherry tomatoes, halved, about 30 grape tomatoes, about 3 romas, quartered, or 2 large garden tomatoes or chopped in large pieces |
2t olive oil |
1/2 cup bread crumbs |
3t fresh parmesan cheese, grated |
1t garlic powder |
1t dried parsley |
3t butter, melted |
sea salt and fresh ground pepper |
Directions:
1. Arrange broccolini in oven safe casserole dish or single serve dishes, to cover bottom of pan. 2. Add onion and tomatoes See Photo 3. Drizzle with olive oil and salt and pepper 4. Combine bread crumbs, Parmesan, garlic powder, parsley and a lil more salt and pepper in small bowl. 5. Sprinkle bread crumb mixture over veggies then drizzle with melted butter See Photo 6. Bake at 400 for about 20 minutes until broccolini is tender and bread crumbs are golden brown and crispy. |
