If you are roasting a chicken or other meat in the oven, save 1/4 cup of the fat drippings, and use to coat the broccoli instead of the olive oil. The variations on this are endless - include tiny baby carrots and cauliflower if desired. Ingredients:
1/4 cup olive oil |
1 head broccoli, cut into florets |
2 garlic cloves, chopped |
salt |
pepper |
Directions:
1. Preheat oven to 400 degrees. 2. Toss broccoli and garlic in the oil until coated. 3. Add salt and pepper to taste and spread in one layer on cookie sheet. 4. Roast for 5 to 8 minutes, or until tender, stirring once or twice. |
