This is a basic recipe on how to roast fresh beets from your farm share or the market. Ingredients:
4-6 whole beets, or as many as you have |
olive oil |
salt |
aluminum foil |
Directions:
1. Preheat oven to 425 degrees. 2. Remove beet greens, reserve for a different recipe 3. Wash and rinse beets. 4. Add enough olive oil to coat beets in a bowl. 5. Roll beets around in oil and lightly salt. 6. Seal beets in aluminum foil and place in oven. 7. Roast until fork tender. 8. Cool beets. 9. Slide skins off after cool, or before if you want to burn your fingers :). |
