When you boil the beets you lose most of their yummy flavor. Here you keep their delicious earthy flavor of the root veggie. Ingredients:
3 medium beets |
1 tablespoon olive oil |
Directions:
1. Heat the oven to 375°F and arrange the rack in the middle. 2. Rinse beets and trim off any leafy tops. 3. Wrap beets in aluminum foil and place in oven. 4. Roast until tender and easily pierced with a knife, about 1 hour. Remove from oven and let cool. 5. When beets are cool enough to handle, peel using a paring knife or by pushing the skin with your fingers. 6. Slice beets, drizzle with olive oil, and season with salt and freshly ground black pepper. |
