Beets are a very good source of vitamin C, and are so delicious. I don't think there is any preparation of beets any better than oven-roasted - so good!! Ingredients:
2 lbs fresh beets, washed and trimmed |
1/2 lb shallot, peeled |
1 tablespoon vinegar |
1 tablespoon olive oil |
1/2 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. Preheat oven to 400°F Place beets and shallots on a large sheet of aluminum foil and fold the edges together to seal. Bake for 1 hour or until beets are tender. Remove from oven and cool. 2. Combine remaining ingredients and set aside,. 3. Remove skins from beets, cut into chunks, and drizzle with vinegar mixture. Toss well and serve. |
