Roasted Balsamic Red Potatos and Onions

Unique potato and onion side dish. Great with chicken, beef or pork.
Ingredients:
2 lbs. red potatos, small, cut in half
3/4 lbs. onion, peeled, cut into wedges
3 tablespoons olive oil
1/4 cup balsamic vinegar
1 teaspoon dried thyme
1/2 teaspoon garlic salt
1/4 teaspoon black pepper, ground
Directions:
1. Preheat oven to 400.
2. Pour olive oil onto jelly roll pan, add potatoes and onions and toss to coat. Cover with foil and bake for 30 minutes.
3. Remove foil and add vinegar, thyme, garlic salt and pepper.
4. Increase heat to 450.
5. Continue to roast, uncovered, for 30 to 40 minutes, stirring occasionally, until potatos are fork tender.
