Whack the aubergines on the BBQ whilst the coals are too hot for the rest of the food to handle and you get a beautiful smokey flavour Ingredients:
500g aubergines |
3 cloves garlic, crushed |
1/2 medium red onion, chopped |
1 tbsp tahini sauce |
50ml olive oil |
1/2 lemon, juiced |
a pinch of cumin |
salt and pepper, to taste |
Directions:
1. Roast the aubergine/eggplant on a BBQ to give a smoked flavour. 2. Cook until completely soft in the middle and skin is burned 20-30 mins on hot BBQ 3. Allow to cool and remove all the blackened bits, some will stay but they add to flavour 4. combine with all other ingredients either by chopping by hand or put it in a blender, should have the consistency of thick yogurt |
