A delicious sign of better weather.There is a richness to these asparagus from the sun dried tomatoes and a freshness from the scallions. Ingredients:
11/2lbs asparagus,bottoms trimmed |
2 bunches scallions,ends trimmed |
2tbs finely chopped oil-packed sun-dried tomatoes plus 1tbs oil from jar |
1/4tsp salt |
ground black pepper ,to taste |
Directions:
1. Heat oven to 450. In large bowl,toss asparagus and scallions with the oil from the sun -dried tomatoes. Transfer to baking sheet and arrange in even layer. Season with salt and pepper. 2. Roast about 7 mins. Stir the vegetables and roast till tender and slightly browned,about another 5 mins. Sprinkle with chopped sun-dried tomatoes and toss to combine. Serve immediately or at room temperature. |
