Roasted Asparagus With Olives |

I love roasted asparagus and this recipe is no exception. The subtle garlic flavor with roasted olives is wonderful. What can be more simple and elegant? Ingredients:
1 1/2 pound asparagus, trimmed (i prefer the pencil thin ones) |
1/2 cup kalamata olives, pitted |
1 1/2 tbl. olive oil |
2 gloves garlic, minced |
kosher salt and coarse pepper to taste |
Directions:
1. Place asparagus and olives on a baking sheet, drizzle with olive oil. 2. Sprinkle garlic, salt and pepper over top and toss to lightly coat olives and asparagus. 3. Roast in a 425 degree preheated oven for 10-12 minutes or until crisp tender. |
