Roasted Asparagus with Lemon and Pine Nuts |

Ingredients:
1/2 cup(s) chopped toasted pine nuts or macademia nuts |
2 pound(s) fresh asparagus |
1 tablespoon(s) fresh lemon juice |
1/4 cup(s) olive oil |
Directions:
1. Preheat oven to 500 degrees. Bend asparagus snapping to break. Spread asparagus in single layer on rimmed baking sheet. Whisk olive oil and lemon jiuce in small bowl. Brush asparagus with misture turning to coat all side then sprinkle with salt and pepper. 2. Roast asparagus until crisp tender, bright green and just starting to show brown spots-about 7 minutes. Sprinkle with nuts and serve. |
