Roasted Asparagus With Balsamic Browned Butter |

This dish is a nice yet healthy change from the usual asparagus dish and goes well with most main courses. Another way of cooking it is to add raw asparagus to a frying pan that has a little bit of butter melted in it. Read more . Then add just a little bit of water and cover with a lid. Carefully cook asparagus adjusting heat as necessary (in other words be careful not to burn the veggie) When asparagus is cooked to your taste, add the rest of the ingredients (including a little more butter) to the frying pan and toss. Ingredients:
40 asparagus spears, trimmed (about 2 lbs.) |
cooking spray |
1/4 tsp. kosher salt |
1/8 tsp. black pepper |
2 tbsp. butter |
2 tsp. soy sauce |
1 tsp. balsamic vinegar |
Directions:
1. Preheat oven to 400 degrees F. 2. Arrange asparagus in a single layer on a baking sheet. 3. Coat asparagus with cooking spray. 4. Sprinkle with salt and pepper. 5. Bake at 400 degrees for 12 min. or until tender. 6. Melt butter in skillet until lightly browned. 7. Remove from heat and stir in soy sauce and vinegar. 8. Add asparagus and toss. Makes 8 servings. 9. Tip: When choosing asparagus, note that the fresh ones are firm not soft, at the tips. Bend a spear until it snaps and discard the bottom part. If asparagus is rather thick, use a vegetable peeler on the stems. |
