Roasted Asparagus,chive And Asiago Salad |

My girlfriend served this salad last Christmas at a Dinner Party and I asked for the recipe because it was so yummy. Read more . It's a nice looking salad, and something a little different to dress up your dinner with. Enjoy. I just eyeballed the amount of asparagus I made last night so that there was enough for the three of us and had about half the dressing left over. Ingredients:
2 lbs. asparagus |
2 tbsp. olive oil |
salt and freshly ground pepper (i actually used an alderwood smoked salt to sprinkle over the asparagus and it was to die for) |
1/2 cup green onions or chives, chopped |
4 oz. asiago cheese (i didn't realize there were different types of asiago so the one i had purchased was 'young' and therefore more like a mozzarella. it was nice, but i'd buy an aged one next time.) |
vinaigrette |
1 tbsp. white wine vinegar |
1 tsp. lemon juice |
1/4 cup extra virgin olive oil |
salt and freshly ground pepper |
Directions:
1. Preheat oven to 350F. 2. Snap off the bottom ends of asparagus and clean thoroughly. 3. Place on an oiled baking sheet and brush with olive oil. Season with salt and pepper. 4. Bake for 8 min. or until crisp tender. Remove and cool. 5. Toss with chives/green onions. 6. Shave Asiago cheese with a vegetable peeler or paring knife. Reserve. 7. Whisk together vinegar and lemon juice. Whisk in olive oil. 8. Season well with salt and pepper. Toss with asparagus and garnish with cheese. |
