Roasted Asparagus And Green Beans |

I make this practically once a week when asparagus is in season. It is great to serve to company as well. To stretch the number of servings, but not break the bank, I ended up using 1 bunch of asparagus and 1 pound of green beans, and it just stuck! Read more ! You can, of course, eliminate either the asparagus or the green beans, and it is just as good. Ingredients:
1 bunch asparagus |
1 lb green beans, trimmed |
5 cloves garlic, minced or pressed |
1 tbsp kosher salt |
freshly ground black pepper |
extra-virgin olive oil (approximately 2 tbsp) |
balsamic vinegar, to taste |
Directions:
1. Heat oven to 500*. 2. Bring 1 of water to a boil in a sauce pan fitted with a steamer basket. Steam green beans for 2 minutes. Remove from heat. 3. Trim or break tough ends off all asparagus spears, and place in one layer in a shallow baking pan or cookie sheet. Use green beans to fill in the spaces, trying to keep to one layer 4. Sprinkle with garlic and salt, and grind a generous amount of pepper over everything. 5. Drizzle with olive oil and toss to coat evenly. 6. Roast for about 10 minutes (less for a crisper final product, or more for a better roasted taste) 7. Remove from oven and drizzle with balsamic vinegar by placing one or two fingers over the opening of the bottle. 8. Serve warm and enjoy! |
