Ingredients:
2 pounds medium-size fresh asparagus spears, trimmed |
vegetable cooking spray |
1/2 cup pine nuts, toasted |
1 plum tomato, seeded and chopped |
Directions:
1. Spray asparagus lightly with cooking spray, and arrange asparagus in an aluminum foil-lined pan. 2. Bake at 425° for 7 minutes. 3. Sprinkle asparagus with pine nuts and tomatoes. |
