Ingredients:
3 pounds asparagus spears |
2 teaspoons olive oil |
1 chopped garlic clove |
2 tablespoons fresh lemon juice |
salt and pepper |
Directions:
1. Preheat oven to 400°F. Snap off tough ends of 3 lb. asparagus spears. 2. In a large baking pan, toss asparagus with 2 tsp. olive oil, 1 chopped garlic clove and 2 Tbsp. fresh lemon juice, then season with salt and pepper. 3. Roast, shaking pan and stirring often, until tender, 25 to 30 minutes. Serves 8. |
