Homemade roast veg soup Ingredients:
200 g sweet potato |
500 g butternut squash |
100 g carrot |
1 red pepper |
2 tbsp olive oil |
1/2 tsp salt |
1/2 tsp pepper |
1 litre water |
Directions:
1. Peel and cut up into large chunks all the veg. Put in roasting tin - add olive oil and cook in oven (180) for 40 mins. 2. Once cooked, blitz up with blender, adding water until required consistency. |
