Roast Vegetable Ratatoille
Ingredients:
200 g aubergine
2 courgettes
400 g tinned tomatoes
2 bell peppers
1 onion
1 tbsp mixed herbs
1 tsp balsamic vinegar
Directions:
1. chop veg and sprinkle with herbs and balsamic
2. roast until browned and softened 200'C
3. transfer to pan and add tomatoes
4. cook until reduced
5. serve with pasta
