Roast Vegetable Ratatoille Ingredients:
200 g aubergine |
2 courgettes |
400 g tinned tomatoes |
2 bell peppers |
1 onion |
1 tbsp mixed herbs |
1 tsp balsamic vinegar |
Directions:
1. chop veg and sprinkle with herbs and balsamic 2. roast until browned and softened 200'C 3. transfer to pan and add tomatoes 4. cook until reduced 5. serve with pasta |
