Roast Turkey
Ingredients:
12 lbs whole turkey
2 cups salt
2 tablespoons rosemary
2 tablespoons italian seasoning
2 tablespoons cinnamon-sugar mixture
1/2 tablespoon garlic salt
1/2 tablespoon pepper
Directions:
1. Thaw turkey.
2. 24 hours in advance to cooking clean out &brine turkey. Fill large bucket or pan with enough water to cover turkey. Mix in 2 cups of salt and add turkey. Soak overnight (approx. 24 hrs).
3. Rinse turkey throughly, inside and out.
4. Preheat oven to 400.
5. Place turkey in roasting pan with 3 cups of water.
6. Mix in small cup; all seasonings, smash up rosemary as well as possible and sprinkle mixed seasons all over the turkey.
7. Stuff turkey if you wish at this point -
8. Cover and place in oven until throughly cooked (approx. 4 hours).
9. Remove cover for last hour to brown and crisp.
10. Baste turkey with pan juices every 30 - 45 minutes.
