Roast Sweet Potato And Bacon Salad |

A great warm salad that is good to serve as a side or - as we like it - for lunch. Enough warm ingredients that you could eat it in Autumn when sweet potatoes are their best. The taste combination of salty bacon and sweet potato and the creaminess of the dressing with the bitterness of the rocket makes this a real treat. Ingredients:
2 large sweet potatoes (kumara), cut into wedges |
2 tbspn olive oil |
salt |
8 rashers bacon, rind removed |
1 bunch (100g) rocket (arugula) |
1/4 cup pine nuts |
buttermilk and chive dressing |
1/2 cup buttermilk |
1 tbspn lime juice |
1 tbspn chopped chives |
salt and pepper to taste |
Directions:
1. Preheat oven to 390F 2. Combine ingredients for dressing, stir to combine and set aside. 3. Place sweet potato, oil and salt in a baking dish lined with baking paper and toss to combine. Roast for 10 minutes. 4. Remove dish from oven and add bacon. Roast for further 20 minutes or until bacon is crisp and potato is tender. 5. Arrange rocket on a plate and top with potato and bacon. Sprinkle with pinenuts and spoon over dressing. |
