Roast Potatoes- Greek Style |

I love Greek potatoes! This recipe is the closest I could get to my favorite local Greek restaurant down the street. My method- the more mustard, the better! Ingredients:
5-6 peeled potatoes- cut in half |
2 lemons |
1/2 cup olive oil |
5 tbsp mustard powder |
1 tsp salt (or to taste) |
1 tsp dried oregano |
1/2 tsp black pepper |
1/2 tsp thyme or rosemary |
4 cloves garlic |
Directions:
1. mix in a blender- garlic, mustard, salt, pepper, lemon juice, olive oil 2. transfer mixture to a baking dish. 3. add oregano and rosemary or thyme 4. place potatoes in mixture. place in refrigerator. 5. marinate for 1 day 6. bake at 350F for approx 1 hour |
