Roast Onions With Port Balsamic Glaze |

The rich color and taste of his dish makes it an excellent foil for turkey. If port is not available, you can sub with sherry or sweet red wine. Ingredients:
4 medium-sized red onions |
rind of 1/2 lemon, cut into strips with a potato peeler |
1/4 cup olive oil |
salt and freshly ground pepper |
1/2 cup port |
1/4 cup balsamic vinegar |
1/2 cup raisins |
1 tbsp brown sugar |
Directions:
1. preheat oven to 375*F 2. place unpeeled, uncut onions and lemon rinds in a large oven-proof pan 3. cover with water 4. bring to the boil, and boil for 5 minutes 5. drain 6. refresh under cold running water 7. drain again 8. discard lemon rinds 9. Next: 10. peel and trim the ends of the onions 11. cut onions in half 12. arrange onions cut side down in the pan 13. add the olive oil, and salt and pepper to your taste 14. bake uncovered, basting occasionally for 30 minutes 15. In the interim: 16. combine port, balsamic vinegar, raisins and brown sugar in a pot 17. bring to a boil 18. pour over onions 19. bake another 40 minutes, or until the juices are syrupy |
