Roast Chicken With Lemon Tarragon Butter |

This is a simple but elegant way to prepare chicken. From Gourmet Magazine 2003 Ingredients:
1/2 stick butter, softened |
1 tsp. finely grated lemon zest |
1/2 tsp. dried tarragon, crushed |
1/2 tsp. salt |
1/2 tsp. pepper |
3-4 lb. chicken parts |
salt and pepper to taste |
Directions:
1. Preheat oven to 500 2. In mixing bowl, combine butter, lemon zest, tarragon. and salt and pepper until blended 3. Loosen skin on chicken by working your fingers between skin and meat, keeping skin attached on one side 4. Rub butter under skin of each piece of chicken 5. Put skin back intact 6. Rub remaining butter over skin 7. Season with salt and pepper 8. Bake in roasting pan for 30 minutes |
